  • 2 large baking potatoes
  • 200g block of feta
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon (halved)
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes, then par-boil in water for 6-8 minutes. Drain and steam dry.
  3. In a baking dish, combine par-boiled potatoes with thyme, oregano, salt, pepper, and olive oil; toss well.
  4. Drizzle olive oil over the garlic head, wrap in foil, and add to the baking dish.
  5. Roast for about 30–40 minutes until potatoes are golden brown and crispy.
  6. Remove from oven; place feta in the center of the tray and squeeze half a lemon over it.
  7. Return to oven for an additional 15 minutes until feta is soft.
  8. Squeeze roasted garlic out from its skins and mash lightly; stir into the roasted potatoes along with juice from the remaining lemon and fresh basil.
  9. Drizzle honey over the dish and sprinkle with red chili flakes before serving.
