  • 1 cup nonfat Greek vanilla-flavored yogurt
  • 1 cup Kodiak pancake mix (or your favorite pancake mix)
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 ½ cups blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the eggs and Greek yogurt until smooth.
  3. Add in the pancake mix, baking powder, and salt. Stir until just combined.
  4. Gently fold in the blueberries, being careful not to overmix.
  5. Portion out the batter using a ⅓ cup measuring scoop onto the prepared baking sheet, pressing a few extra blueberries on top.
  6. Bake for about 20 minutes or until golden brown and slightly jiggly in the center.
  7. Allow pastries to cool completely on the baking sheet for about 30 minutes before serving.
