  • 1 cup white onions (chopped)
  • 1 clove garlic (finely diced)
  • 1/4 cup vegan butter
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Prepare all ingredients by chopping onions, dicing garlic, finely chopping broccoli, and julienning carrots.
  2. In a large pot over medium heat, melt vegan butter and sauté onions and garlic until translucent (about 5-7 minutes).
  3. Stir in all-purpose flour until combined to form a roux.
  4. Gradually whisk in vegetable broth and rice milk until smooth.
  5. Bring to a boil; reduce heat to medium.
  6. Add broccoli and carrots; cook for about 10 minutes until tender yet vibrant.
  7. Stir in vegan cheddar cheese until melted.
  8. Blend about 1/4 of the soup until smooth; return blended portion to the pot.
  9. Season with salt and pepper to taste before serving hot.
