  • 1 lb ground chicken
  • 1/2 cup buffalo wing sauce
  • 1/2 packet ranch seasoning (about 2 tbsp)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut each zucchini in half lengthwise and scoop out the center using a melon baller or spoon.
  3. In a medium pan over medium heat, cook the ground chicken until no longer pink. Stir in buffalo sauce and ranch seasoning until combined.
  4. Fill each hollowed zucchini with the chicken mixture and top generously with mozzarella cheese.
  5. Place in a greased baking dish, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly.
