  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta (your choice)
  • 1/3 cup reserved pasta water

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and thyme; mix to coat evenly.
  4. Roast for about 20 minutes until vegetables are tender and caramelized.
  5. While roasting, cook the pasta according to package instructions; reserve 1/3 cup pasta water before draining.
  6. Transfer roasted vegetables to a blender, add reserved pasta water, and blend until smooth.
  7. Combine the creamy sauce with drained pasta and serve hot.
