  • 1 pound ground beef
  • 5 cups chopped green cabbage
  • 5 cups beef stock
  • 1 cup riced cauliflower
  • 1/2 cup diced carrots
  • 1.5 teaspoons table salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground thyme
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot over medium-high heat, add ground beef and diced carrots. Cook until browned, about 5 minutes.
  2. Add diced tomatoes (with their liquid), chopped cabbage, beef stock, riced cauliflower, salt, oregano, and thyme. Stir for one minute.
  3. Bring to a simmer, cover the pot, reduce heat to medium-low, and cook for about 30 minutes until the cabbage is tender.
  4. Uncover and stir well. Serve hot, garnished with fresh parsley.
