  • 6 chicken tenders (cut into chunks)
  • 1 small yellow onion (diced)
  • 4 cups halved cherry tomatoes
  • 1 cup part-skim mozzarella pearls (quartered)
  • Fresh basil leaves (chopped)

Instructions

  1. In a small saucepan, combine balsamic vinegar and honey over medium-low heat until thickened. Set aside.
  2. Season chicken with salt, pepper, and lemon seasoning. Heat olive oil in a cast iron skillet over medium-high heat; cook chicken until browned.
  3. Remove chicken and sauté onions in the same skillet before adding garlic.
  4. Stir in cherry tomatoes, thyme, remaining balsamic vinegar, and seasonings; cook until tomatoes soften.
  5. Return chicken to skillet, top with mozzarella, cover, and let sit until cheese melts.
