  • 1.5 lbs boneless skinless chicken breasts (cut into 1" cubes)
  • 2 lbs zucchini (cut into 1" cubes)
  • 1.5 lbs tomatoes (sliced)
  • 7 garlic cloves (minced)
  • 6 oz can low sodium tomato paste
  • 1 tbsp balsamic vinegar
  • 9 oz fresh mozzarella cheese (thinly sliced)
  • Handful of fresh basil (thinly sliced)
  • Salt and ground black pepper to taste
  • 2 tbsp oil (divided)

Instructions

  1. Preheat a large deep skillet over medium heat and coat with 1 tablespoon of oil.
  2. Add cubed chicken, season with salt and pepper, and cook for about 5 minutes until browned.
  3. Move chicken to one side; add remaining oil and minced garlic to the empty space. Sauté for about 30 seconds.
  4. Stir in sliced tomatoes, tomato paste, balsamic vinegar, oregano, remaining salt, and basil; cook for around 5 minutes until well combined.
  5. Add zucchini to the mixture; stir well and cover, cooking on low-medium heat for about 12 minutes.
  6. Lay mozzarella slices on top; reduce heat to low and let simmer for an additional 5 minutes until melted.
  7. Garnish with fresh basil before serving.
