  • 13.5 ounces full-fat coconut milk (with 2 tablespoons set aside for glaze)
  • 10 ounces bittersweet chocolate
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons coconut milk (taken from can above)
  • 2 ounces bittersweet chocolate
  • 1 teaspoon maple syrup
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix crust ingredients until sticky; press into a 9-inch tart pan and poke holes to prevent bubbling.
  3. Bake crust for 10-12 minutes until firm; cool on a wire rack.
  4. Heat coconut milk until simmering; remove from heat and stir in bittersweet chocolate until smooth.
  5. Whisk eggs with vanilla extract and salt; combine with cooled ganache.
  6. Pour ganache into the cooled crust and bake for 20-25 minutes until edges are firm but center wobbles slightly.
  7. Cool on wire rack for 30 minutes, then refrigerate for another 30 minutes before glazing.
  8. Prepare glaze by heating coconut milk, maple syrup, and water; stir in chocolate until melted.
  9. Pour glaze over the tart, spreading evenly; let set for 30 minutes before serving.
