  • 1/3 cup melted coconut oil or dairy-free butter
  • 3/4 cup brown sugar or coconut sugar
  • 1 1/2 cups overripe bananas, mashed (about 3 large bananas)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • For the Cinnamon Sugar Swirl: 1/4 cup white sugar and 2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a mixing bowl, combine melted coconut oil and brown sugar; mix until well combined. Add mashed bananas, eggs, and vanilla extract; blend until smooth.
  3. Stir in gluten-free flour, baking soda, cinnamon, and salt until there are no lumps.
  4. Pour half the batter into the prepared loaf pan and sprinkle with most of the cinnamon sugar mixture.
  5. Spread remaining batter on top and sprinkle with reserved cinnamon sugar.
  6. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool completely before slicing.
