  • 4 tablespoons butter
  • pounds boneless skinless chicken breasts (cut into 1" pieces)
  • 1 pound asparagus (cut into 1" to 2" pieces then steamed)
  • ¼ cup onion (chopped)
  • 8 ounces mushrooms (sliced)
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1½ cups shredded gouda or swiss cheese
  • ½ cup shredded parmesan cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Steam asparagus in a microwave-safe dish with water for about 3 minutes until tender; drain and set aside.
  3. In a skillet, melt butter over medium-high heat. Cook chicken pieces for about 3 to 4 minutes on each side until golden brown and fully cooked.
  4. Remove chicken and place it in a greased casserole dish with the steamed asparagus on top.
  5. Sauté onions and mushrooms in the same skillet until tender.
  6. Add chicken broth, heavy cream, salt, pepper, thyme, mustard, mayonnaise, and lemon juice to the skillet; whisk together and simmer until slightly thickened (8 to 10 minutes).
  7. Pour sauce over chicken and asparagus, stirring in half of the shredded cheese.
  8. Top with remaining cheese and bake for about 30 minutes until bubbly.
