  • 1 cup chicken stock
  • ½ cup heavy cream
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Seasonings: Italian seasoning, oregano, red pepper flakes, salt, and pepper

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the chicken thighs for 2-3 minutes on each side until golden brown. Season with salt and pepper. Remove from skillet.
  2. In the same skillet, add minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes; sauté for 2-3 minutes.
  3. Pour in chicken stock and heavy cream, then stir in grated Parmesan cheese. Gradually whisk in cornstarch until smooth.
  4. Return the chicken to the skillet, cover with sauce, reduce heat, and cook covered for 15-20 minutes until cooked through.
  5. Stir in fresh basil before serving warm.
