  • 1/3 cup plain plant-based milk
  • 1/3 cup all-purpose flour (or gluten-free)
  • 1 cup panko breadcrumbs
  • 1 cup buffalo sauce
  • Corn tortillas (6-8)

Instructions

  1. Preheat your oven to 450°F (232°C). Pat the tofu dry, press if necessary, and cut into bite-sized pieces.
  2. In a mixing bowl, combine the plant-based milk, flour, garlic powder, paprika, salt, and black pepper. Whisk until smooth.
  3. Coat the tofu pieces in the batter and then cover with panko breadcrumbs.
  4. Place the coated tofu on a greased baking sheet in a single layer. Bake for 15-20 minutes, flipping halfway through until golden brown.
  5. Toss baked tofu in buffalo sauce until well coated.
  6. Warm corn tortillas and layer with guacamole and buffalo tofu, adding desired toppings.
