  • 1 bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 lb ground beef
  • 4 tbsp keto taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • 1½ cups shredded cheese
  • ½ cup heavy whipping cream

Instructions

  1. Preheat oven to 350°F (180°C). In a large skillet over high heat, cook onions, bell pepper, garlic, and ground beef until browned. Break beef into bite-sized pieces.
  2. Stir in taco seasoning and tomato paste until well combined. Transfer the mixture to a casserole pan.
  3. In a mixing bowl, whisk eggs, heavy cream, and half the cheese together. Pour over the meat mixture and spread evenly. Top with remaining cheese.
  4. Bake uncovered for about 15-17 minutes until golden and bubbly. Allow to cool for 5 minutes before serving.
