  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 teaspoons minced garlic
  • 1/4 cup low-sodium chicken broth (or water)
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons corn starch
  • Salt and pepper, to taste

Instructions

  1. Wash and trim the green beans; cut them into 1-inch pieces. Cut the chicken breasts into bite-sized chunks for even cooking.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken pieces and season with salt and pepper.
  3. Sauté the chicken for about 5-7 minutes until cooked through. Add minced garlic and cook for an additional minute until fragrant.
  4. Add the green beans to the skillet. In a separate bowl, whisk together chicken broth, soy sauce, honey, and corn starch; pour over the chicken and green beans.
  5. Reduce heat to medium-low and simmer for about 5-7 minutes until the green beans are tender yet crisp. Adjust seasoning if necessary.
  6. Serve hot over rice or enjoy on its own.
