  • 1 ¼ cup warm water
  • 1 cup warm whole milk
  • 2 large eggs
  • 6 tablespoons melted butter
  • 1 cup brown sugar
  • 2 tablespoons cinnamon
  • 8 ounces cream cheese, softened
  • 4 tablespoons butter, softened
  • 1 ⅓ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar for glaze
  • 1/31/2 cup milk for glaze
  • 2 teaspoons vanilla extract for glaze
  • Pinch of salt for glaze

Instructions

  1. In a mixing bowl, combine warm water and warm milk; add yeast and let sit until frothy.
  2. In a stand mixer bowl, mix gluten-free flour, sugar, salt, and baking powder.
  3. Add the yeast mixture, eggs, and melted butter to the dry ingredients; mix on low speed until combined.
  4. Increase speed to medium and mix for about 3-5 minutes until smooth.
  5. Cover the dough with a towel and let it rise in a warm place for about 1 hour or until doubled.
  6. Prepare the filling by mixing brown sugar and cinnamon; roll out dough into a rectangle.
  7. Spread melted butter over the dough and sprinkle the filling evenly; roll tightly into a log.
  8. Cut into equal pieces and place on a baking sheet lined with parchment paper; let rise for another 30 minutes.
