  • 3 eggs, at room temperature
  • 1 cup granulated sugar
  • ½ cup lemon juice, freshly squeezed
  • 1 tbsp lemon zest, grated
  • ½ cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • Powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper.
  2. For the crust, beat together softened butter, granulated sugar, lemon zest, and vanilla extract until fluffy. Mix in gluten-free flour and salt, then press into the bottom of the dish and bake for 20 minutes.
  3. For the filling, combine eggs, sugar, lemon juice and zest, gluten-free flour, and salt until smooth. Pour over the cooled crust.
