  • 2 cups broccoli florets
  • 3 cups fresh spinach leaves
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup chicken broth or water
  • 1 tbsp fresh lemon juice
  • 1/4 cup grated Parmesan cheese (optional, for garnish)

Instructions

  1. Chop chicken into bite-sized pieces and mince garlic. Rinse broccoli and spinach.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and sauté until cooked through (6-8 minutes). Remove from skillet.
  3. In the same skillet, add another tablespoon of olive oil and broccoli. Cook for about 3-4 minutes until slightly softened.
  4. Lower heat to medium; add minced garlic and spinach to the skillet. Cook until spinach wilts (about 2 minutes).
  5. Return chicken to the skillet; pour in chicken broth, stir well, and let simmer for another 2-3 minutes.
  6. Finish with fresh lemon juice and sprinkle with Parmesan if desired.
