  • 2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tsp Ground ginger
  • 1 tsp Cinnamon
  • 1/4 tsp Ground clove
  • 1 tbsp Espresso powder
  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown Sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses
  • White granulated sugar (for rolling)
  • 1 1/2 cup Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Espresso or strong coffee

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, ground clove, and espresso powder.
  3. In another bowl, cream softened butter with brown and white sugars until creamy; add egg and vanilla extract.
  4. Mix in molasses until combined.
  5. Gradually add dry ingredients to wet ingredients; mix until just combined.
  6. Roll dough into tablespoon-sized balls; coat in granulated sugar before placing on the baking sheet.
  7. Bake for about 13 minutes until edges are set; cool slightly before transferring to a rack.
  8. For the glaze: combine powdered sugar, ground cinnamon, and espresso or strong coffee until smooth; drizzle over cooled cookies.
