  • 1 1/2 cup gluten free flour blend (210 g)
  • 3/4 teaspoon xanthan gum (only add if your GF flour blend doesn't already contain xanthan)
  • 1 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons light brown sugar (28 g)
  • 2/3 cup milk, dairy or non-dairy (160 ml)
  • 1 tablespoon oil (15 ml)
  • 2 eggs or 6 tablespoons aquafaba (90 ml)
  • 2 teaspoons vanilla extract
  • 2 apples, peeled and finely diced
  • 3 cups powdered/icing sugar (375 g)
  • 3 tablespoons milk, dairy or non-dairy (45 ml)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the gluten-free flour blend, xanthan gum, baking powder, salt, ground cinnamon, ground nutmeg, and light brown sugar until well combined.
  2. Stir in the milk, oil, eggs (or aquafaba), and vanilla extract. Whisk until you have a thick, smooth batter with no lumps.
  3. Fold in the finely diced apples until they are evenly distributed throughout the batter.
  4. In a large skillet or deep pot, add enough oil so it’s about 1.5 to 2 inches deep.
  5. Turn the heat to medium-high and allow the oil to get hot enough to reach about 360°F to 375°F (80°C to 90°C).
  6. Once the oil is hot, carefully scoop out about 1-2 tablespoons of batter using a big spoon and drop it into the oil.
  7. Ensure there is enough space between each fritter so they can cook evenly—typically fit about three to four at a time depending on your pot size.
  8. Fry each fritter for approximately three minutes on one side before flipping it over and frying for an additional two to three minutes until golden brown.
  9. After frying all batches of fritters, carefully remove them from oil using a slotted spoon and place them on a wire cooling rack.
  10. To make the glaze, whisk together powdered sugar, milk, and vanilla in a small bowl until thick yet pourable.
  11. Once cooled slightly but still warm, dip each fritter into the glaze allowing excess glaze to drip off before setting back on the rack.
