  • 1 cup gluten-free all-purpose flour with xanthan gum
  • ½ tsp salt (plus extra for topping)
  • ¼ tsp garlic powder
  • ¼ cup salted butter (cold and cubed)
  • 45 tbsp cold water

Instructions

  1. In a large bowl, combine shredded cheese, flour, salt, garlic powder, and butter. Mix using a fork or pastry blender until crumbly.
  2. Gradually add cold water, one tablespoon at a time, until the mixture forms a ball. Divide into two discs and refrigerate for at least one hour.
  3. Preheat oven to 375ºF. Roll out one disc of dough on a floured surface to your desired thickness and cut into squares using a knife or pizza cutter.
  4. Transfer squares to a parchment-lined baking sheet. Optionally poke holes in each cracker and sprinkle with salt.
  5. Bake for 14-16 minutes until golden orange. Let cool before serving.
