  • 3 teaspoons instant yeast
  • 4 tablespoons unsalted butter (room temperature)
  • 1 egg (beaten)
  • 1 1/4 cups warm milk
  • For filling: 3/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • For icing: 1 cup confectioners' sugar
  • 6 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch x 13-inch casserole dish.
  2. In a mixing bowl, combine gluten-free flour blend, tapioca starch, dry milk powder, yeast, and salt.
  3. In another bowl, mix warm milk with apple cider vinegar; then add beaten egg and softened butter.
  4. Combine wet ingredients into dry ingredients until a dough forms; adjust flour if sticky.
  5. Roll out the dough into a rectangle and spread softened butter evenly.
  6. Sprinkle cinnamon and brown sugar over the dough; roll tightly and cut into pieces.
  7. Place rolls in the prepared dish and let rise for about an hour until doubled in size.
