  • 1/2 cup dairy-free margarine (110g)
  • 3/4 cup all-purpose gluten-free flour (110g)
  • 4 tbsp powdered sugar (30g)
  • 1/4 tsp baking powder
  • 1/4 tsp xanthan gum (omit if your flour blend contains gum)
  • 2 oz dairy-free chocolate (50g)

Instructions

  1. Preheat the oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the dairy-free margarine and powdered sugar until smooth.
  3. Gradually add the gluten-free flour, baking powder, and xanthan gum, mixing until fully combined.
  4. Transfer the dough into a piping bag fitted with a star tip and pipe three-inch long cookies onto the prepared baking sheet.
  5. Bake for 10-15 minutes until pale golden. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  6. Melt the chocolate and dip each cookie in it before placing back on the wire rack to set.
