  • 275 g gluten free plain flour
  • 125 g cold unsalted butter (or dairy-free alternative)
  • 1 tsp xanthan gum
  • Pinch of salt
  • 50 g light brown sugar
  • 1 large egg (beaten)
  • 12 tbsp cold water

Instructions

  1. Cut the cold butter into small cubes and place in a bowl.
  2. Sift gluten-free flour into the bowl and rub in the butter until it resembles breadcrumbs.
  3. Add xanthan gum, brown sugar, and salt; whisk together.
  4. Mix in the beaten egg gradually while blending on low speed or using a fork.
  5. Add cold water one tablespoon at a time until you achieve a slightly sticky dough.
  6. Form the dough into a ball, wrap in cling film, and chill for 30 minutes.
  7. Preheat your oven to 180°C (160°C fan).
  8. Roll out chilled dough on a floured surface to about 3-5mm thick.
  9. Fit the rolled-out dough into your pie tin and prick the base with a fork.
  10. Blind bake with baking paper and weights for even cooking.
