  • 1 ½ tbsp olive oil
  • ⅔ cup diced carrots
  • 1 diced red bell pepper
  • ½ cup diced white onion
  • 12 oz thawed cauliflower rice
  • ¾ cup buffalo sauce
  • ⅓ cup nonfat Greek yogurt
  • 2 egg whites

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add carrots, onions, and bell pepper; season with garlic powder, dried parsley, salt, and pepper. Sauté for about 4 minutes until vegetables are translucent.
  3. Stir in thawed cauliflower rice and cook for another 4 minutes.
