  • 4 cups cauliflower rice
  • 8 oz cream cheese (or Greek yogurt)
  • 1 cup shredded cheddar cheese (divided)
  • 1 tbsp olive oil
  • 1 cup chopped spinach, broccoli florets, or sliced mushrooms
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté cauliflower rice in olive oil for 5-7 minutes until tender.
  3. In a large mixing bowl, combine sautéed cauliflower rice, shredded chicken, cream cheese, half of the cheddar cheese, and seasonings. Mix well.
  4. Pour mixture into a baking dish and top with remaining cheddar cheese.
  5. Bake for 20-25 minutes until bubbly and golden.
  6. Allow to cool slightly before serving.
