  • 1 large yellow onion, thinly sliced
  • 23 large bell peppers (mixed colors), thinly sliced
  • 46 cloves garlic, minced
  • ½ cup low-sodium chicken or vegetable broth
  • 2 tablespoons Worcestershire sauce (non-alcoholic)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil (or 2 tsp Italian seasoning blend)
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper, freshly ground
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 8 slices reduced-fat provolone or 1.5 cups part-skim shredded mozzarella
  • 68 whole wheat hoagie rolls

Instructions

  1. Thinly slice the onion and bell peppers; mince the garlic.
  2. (Optional) Sauté onions and peppers in olive oil over medium heat until softened; add garlic.
  3. Layer the sautéed vegetables (or raw if skipping) into the slow cooker.
  4. Place chicken on top of veggies; pour broth and Worcestershire sauce over.
  5. Sprinkle seasonings evenly across the mixture.
  6. Cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is cooked through.
  7. Shred the chicken with two forks and mix back into the slow cooker.
