  • 2 oz unsweetened dark baking chocolate
  • 1/4 cup creamy cashew butter or almond butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1/3 cup cacao powder
  • 1 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/8 tsp pink salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine mashed sweet potato, melted dark chocolate, nut butter, maple syrup, egg, egg yolk, and vanilla extract; whisk until smooth.
  3. Add cacao powder, coconut flour, baking soda, and pink salt; stir until well combined.
  4. Fold in dark chocolate chips and nuts until evenly distributed.
  5. Pour batter into prepared pan and spread evenly. Bake for about 25 minutes or until a toothpick comes out with moist crumbs.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack; slice once completely cooled.
