  • 1 cup 1% cottage cheese
  • ½ cup Frank’s RedHot Sauce
  • ¼ cup light feta cheese
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice each zucchini in half lengthwise and scoop out the center to create “boats.”
  3. In a blender, blend cottage cheese until smooth.
  4. In a mixing bowl, combine shredded chicken, blended cottage cheese, Frank’s RedHot sauce, garlic powder, onion powder, paprika, parsley, black pepper, and salt.
  5. Spoon the filling into each zucchini boat on a parchment-lined baking sheet.
  6. Bake for 20 minutes. Sprinkle feta over each boat and bake for an additional 10 minutes until tender.
