  • 3/4 teaspoons xanthan gum (omit if your GF flour blend already includes it)
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup plain Greek yogurt (or dairy-free Greek yogurt for dairy-free option)
  • 1 large egg
  • 1/4 cup coconut oil, melted
  • 1/4 cup + 1 tablespoon honey, separated
  • 3/4 cup unsweetened almond milk
  • 1 cup + 2 tablespoons old fashioned gluten-free rolled oats, separated

Instructions

  1. Preheat your oven to 375°F and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, sift together the gluten-free flour, baking powder, and salt.
  3. In another bowl, mix the egg, yogurt, melted coconut oil, honey (1/4 cup), and oats. Stir in almond milk until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just incorporated.
  5. Pour into the prepared pan and top with additional oats.
  6. Bake for 30 to 45 minutes or until golden brown and a toothpick comes out clean.
  7. Allow cooling on a rack before brushing with remaining honey and slicing.
