  • 3 large Egg Yolks
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Vanilla Extract
  • 1 1/2 tsp Banana Extract
  • Whipped Cream (for garnish)
  • High-Key vanilla wafers (for garnish)

Instructions

  1. Heat 1 1/4 cups of heavy whipping cream in a saucepan over medium-low heat until steaming.
  2. Remove from heat and let cool slightly.
  3. In a bowl, whisk together 3 large egg yolks. Gradually add warm cream while whisking continuously.
  4. Return the mixture to low heat, pouring in the egg mixture while whisking constantly.
  5. Stir in 1/4 cup Swerve until fully blended.
  6. Simmer over medium-low heat until thickened to pudding consistency, stirring often.
  7. Remove from heat and mix in 1/2 tsp vanilla extract and 1 1/2 tsp banana extract.
  8. Cool while whisking for about 5 minutes, then cover with plastic wrap against the surface to prevent film formation.
  9. Chill in the refrigerator for 2-3 hours before serving with whipped cream and High-Key vanilla wafers.
