2 tsp Baking Powder
1 tsp Garlic Powder
½ tsp Xanthan Gum (optional)
¼ tsp Sea Salt
2 large Eggs
⅓ cup Sour Cream (Full Fat)
3 tbsp Butter (melted)
¾ cup Shredded Cheddar Cheese
2 tbsp Butter (melted) for topping
½ tsp Garlic Powder for topping
½ tbsp Parsley (finely chopped) for topping
Instructions
Preheat the oven to 350°F (180°C) and grease a muffin pan.
In a large bowl, whisk together almond flour, baking powder, sea salt, and garlic powder.
In another bowl, mix eggs, sour cream, and melted butter until smooth.
Combine wet ingredients with dry ingredients and stir until thick.
Fold in shredded cheddar cheese until evenly distributed.
Scoop batter into muffin cups, filling about ¾ full.
Bake for 18–22 minutes or until lightly golden on top.
