  • 24 oz cream cheese
  • 2 cups yogurt
  • 2 1/2 tsp pure vanilla extract
  • 1 tbsp lemon juice (optional)
  • 2/3 cup erythritol
  • Optional crust: 2 cups almond flour
  • 1/4 tsp salt
  • 46 tbsp melted coconut oil or enough water to make it slightly sticky

Instructions

  1. If using, combine almond flour and salt in a bowl. Mix in melted coconut oil until sticky, then press into the bottom of a lined springform pan.
  2. Preheat your oven to 350°F (175°C) with a water-filled baking pan on the lower rack.
  3. Blend room temperature cream cheese, yogurt, vanilla extract, lemon juice (if desired), and erythritol until smooth.
  4. Pour the filling into the prepared crust and bake on the middle rack for about 30 minutes.
  5. Cool gradually in the oven for 5 minutes after baking, then let cool at room temperature before refrigerating overnight.
