  • 1 teaspoon lemon juice
  • 1 tablespoon erythritol
  • 1/2 cup water
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup erythritol
  • 4 eggs (separated)
  • 1 tablespoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 cup mascarpone cheese
  • 1 cup whipping cream
  • 2 tablespoons erythritol, ground
  • 1 tablespoon vanilla extract
  • 2 cups strawberries, sliced

Instructions

  1. Prepare the strawberry mixture by combining chopped strawberries, lemon juice, erythritol, and water. Set aside.
  2. Preheat your oven to 350°F (175°C). Cream together softened butter and erythritol until fluffy. Add egg yolks one at a time, mixing well. Stir in vanilla extract.
  3. In another bowl, whisk coconut flour, baking powder, and salt. Gradually add this to the butter mixture along with alternating water until combined.
  4. Beat egg whites until stiff peaks form and fold gently into the batter.
  5. Pour into a greased baking dish and bake for 25 minutes or until golden brown. Cool completely.
  6. For the filling, beat mascarpone cheese and whipping cream with ground erythritol and vanilla extract until smooth.
  7. Layer half the cake pieces in a serving dish, followed by half of the mascarpone filling and half of the strawberry mixture; repeat.
  8. Chill for at least an hour before serving.
