  • 1 lb asparagus
  • 1 (450g) block super firm tofu
  • Juice and zest of 1.5 lemons
  • 2 tbsp cornstarch
  • 2 tbsp nutritional yeast
  • Avocado oil
  • Black pepper and salt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare asparagus by trimming woody ends; toss with avocado oil, nutritional yeast, salt, pepper, and lemon juice on a lined baking sheet.
  3. Bake for 10-12 minutes until tender.
  4. Coat tofu cubes in a mixture of cornstarch, nutritional yeast, thyme, salt, and black pepper.
  5. Sear tofu in a hot skillet with avocado oil for about 3-5 minutes on each side until golden brown.
  6. Prepare the sauce by mixing lemon juice, zest, maple syrup, vegetable broth, cornstarch, and black pepper; add to the skillet with sautéed garlic.
  7. Return tofu to the skillet to coat in the sauce and serve alongside roasted asparagus.
