  • 1 cup long grain white rice (basmati or jasmine)
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth (or vegetable broth)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté for 2–3 minutes until soft. Stir in garlic and cook for another 30 seconds.
  2. Add the rice to the pot, stirring well to coat it in the oil. Toast the rice for about 1 minute before adding the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Bring to a gentle boil before reducing heat to low. Cover tightly and let simmer for 18–20 minutes until liquid is absorbed.
  4. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork and adjust seasoning if necessary. Garnish with parsley before serving.
