4 sweet or hot Italian sausage links (butterflied)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 yellow onion (diced)
8 oz mushrooms (sliced)
2 cloves garlic (pressed or minced)
6 oz shredded mozzarella cheese
1 Tablespoon extra virgin olive oil
1 Tablespoon balsamic vinegar
Homemade seasoned salt and pepper
Preheat your oven to 350°F (175°C) and line a baking sheet with foil.
In a large skillet over medium-high heat, sear the butterflied sausages cut side down until golden brown, about 5 minutes per side.
Remove sausages and set aside on the prepared baking sheet.
In the same skillet, add olive oil and sauté diced bell peppers and onion until softened. Add sliced mushrooms and garlic; continue cooking until tender.
Stir in balsamic vinegar and season with homemade seasoned salt and pepper.
Place the vegetable mixture on top of the sausages, sprinkle mozzarella cheese generously over everything, and bake for 10-12 minutes until cheese is melted.
