  • 1/2 large jalapeno (diced)
  • 1 small onion (finely diced)
  • 1 tsp olive oil
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 can (4 oz) diced green chiles
  • 6 large eggs
  • 2 oz colby jack cheese (shredded)

Instructions

  1. Preheat your oven to 450°F.
  2. Heat olive oil in an ovenproof skillet over medium heat. Sauté onions and jalapeños for about 2 minutes until softened. Stir in cumin and cayenne pepper; cook for an additional 2–3 minutes.
  3. Add tomatoes, black beans, and green chiles. Stir well and let simmer on low heat for 15–20 minutes until slightly thickened.
  4. Create wells in the mixture with the back of a spoon and crack an egg into each well.
  5. Bake for about 5 minutes until whites are set but yolks remain runny; switch to broil and sprinkle cheese on top. Broil for an additional 1-3 minutes until cheese melts.
  6. Serve hot with tortillas and desired garnishes.
