  • ⅛ teaspoon salt
  • ¼ cup + 1 tablespoon organic cane sugar or granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • ¾ cup diced apples

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a mini muffin pan with coconut oil.
  2. In a bowl, mix melted coconut oil, dairy-free milk, applesauce, and vanilla extract.
  3. In another bowl, whisk together gluten-free flour blend, baking powder, salt, sugar, and spices.
  4. Combine wet and dry mixtures until smooth; gently fold in diced apples.
  5. Pour batter into prepared muffin cups; fill about two-thirds full.
  6. Bake for 9-11 minutes until golden and a toothpick comes out clean.
  7. Cool before dipping tops in melted coconut oil followed by cinnamon sugar mixture.
