  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • 8 oz fresh mozzarella (torn into pieces)
  • 2 cups grape tomatoes (halved)
  • 2 tbsp fresh basil (chopped)
  • Sea salt (to taste)
  • Black pepper (to taste)
  • 2 tbsp vegetable oil

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, mix balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard.
  3. In another bowl, combine mozzarella, halved tomatoes, chopped basil, sea salt, and black pepper.
  4. Heat vegetable oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper and sear for 2-3 minutes on each side until golden brown.
  5. Pour the balsamic mixture over the chicken and let it simmer briefly.
  6. Top the chicken with the mozzarella mixture and bake uncovered for 18-23 minutes until fully cooked.
  7. Let rest for 3-5 minutes before serving.
