  • 2 cups cooked chicken (diced)
  • 3 cups unsalted chicken stock
  • 1 cup heavy cream (or milk alternative)
  • 5 garlic cloves (minced)
  • 2/3 cup grated Parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 3 cups baby spinach leaves (chopped)
  • 1 pint cherry tomatoes
  • 1/2 lemon (juice of)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or more to taste)
  • 1 teaspoon freshly cracked pepper
  • 1/2 teaspoon garlic powder (if not using fresh garlic)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat and sauté diced chicken until golden brown.
  3. Stir in minced garlic until fragrant, about 30 seconds.
  4. Add dry orzo and mix well with chicken; pour in chicken stock and heavy cream, stirring until combined.
  5. Fold in spinach leaves until wilted; add cherry tomatoes on top.
  6. Season with lemon juice, Italian seasoning, salt, and pepper; stir gently.
  7. Top with grated Parmesan and shredded mozzarella evenly.
