  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 15 oz can pumpkin puree
  • 2 cups sifted all-purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 8 oz package softened cream cheese
  • 1/2 cup softened butter (or margarine)
  • 2 cups sifted confectioner's sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat together the eggs, sugar, vegetable oil, and pumpkin puree until fluffy.
  3. In another bowl, mix the flour, baking powder, cinnamon, salt, and baking soda.
  4. Gradually combine dry ingredients with the wet mixture until smooth.
  5. Pour the batter into a greased 9×13-inch baking pan and bake for about 30 minutes or until a toothpick comes out clean.
  6. Allow bars to cool completely in the pan before frosting.
  7. For the frosting, blend cream cheese and butter until smooth; gradually add confectioner's sugar and vanilla extract.
  8. Spread frosting over cooled bars and cut into squares.
