  • 1 cup walnuts, finely chopped
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup melted salted butter
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 8 oz cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T. softened salted butter
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F. Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix chopped walnuts, almond flour, white sugar, and melted butter. Press this mixture into the baking dish to form the crust.
  3. Beat cream cheese and white sugar until smooth; add eggs one at a time.
  4. Set aside 1½ cups of the batter; pour the rest over the crust.
  5. Mix pumpkin puree and pumpkin spice into the remaining batter; layer it on top of the plain cheesecake layer.
  6. For the streusel topping, combine sugars, oats, flour, softened butter, and vanilla until crumbly; sprinkle over the top.
  7. Bake for 60-70 minutes until set; cool before refrigerating for at least two hours.
