  • 1/4 cup olive oil
  • 2 tablespoons chicken broth
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon red pepper flakes
  • 1 cup cilantro
  • 1 small shallot (or 1/2 large)
  • 1 teaspoon minced garlic
  • 1/3 cup olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons water
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 2 cups cooked cilantro lime rice
  • 1 can black beans (drained and rinsed)
  • 1 1/2 cups corn
  • 1 avocado
  • 1 cup pico de gallo

Instructions

  1. Cut the salmon into small cubes.
  2. Whisk marinade ingredients together in a bowl, then toss in the salmon cubes. Cover and refrigerate for at least 1 hour.
  3. Blend vinaigrette ingredients until smooth; set aside.
  4. Heat oil in a skillet over medium heat and cook the marinated salmon for about 3-4 minutes on each side until crispy.
  5. Assemble your bowls by layering cilantro lime rice, black beans, corn, salmon, pico de gallo, and avocado. Drizzle with vinaigrette before serving.
