  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1 tsp sea salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for about 10 minutes. Remove from oven and let cool.
  3. In another large bowl, mix together sliced apples, brown sugar, ground cinnamon, and flour until well coated. Spread the apple mixture evenly over the cooled crust.
  4. In a large mixing bowl, beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
  5. Pour the cheesecake mixture over the apple layer in your springform pan. Bake for approximately 60-70 minutes or until the center is almost set.
  6. Remove from oven and let cool completely at room temperature before refrigerating for at least 4 hours.
  7. In a saucepan over medium heat, melt granulated sugar until it turns amber-colored. Stir in unsalted butter until fully melted. Gradually pour in heavy cream while stirring continuously. Remove from heat and mix in sea salt.
