  • 1 medium spaghetti squash (about 2 lbs.)
  • 1 ½ lb peeled shrimp
  • 4 tablespoons butter
  • 4 cloves garlic (minced)
  • ½ cup white apple vinegar or chicken stock
  • ¼ cup fresh lemon juice (from 1 lemon)
  • 2 ounces baby spinach
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Preheat your oven to 400°F. Cut the spaghetti squash into 1 ½ inch rounds and place them on a baking tray. Roast for about 20 minutes or until tender.
  2. While the squash bakes, season the shrimp with Italian seasoning, salt, and pepper in a mixing bowl.
  3. In a large pan over medium heat, melt the butter and sauté minced garlic for about one minute until fragrant. Add the seasoned shrimp and cook for about two minutes until they turn pink.
  4. Pour in the white apple vinegar or chicken stock and lemon juice; bring to simmer. Add baby spinach until wilted.
