  • 8 oz rice noodles (or lo mein/udon)
  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 tbsp cornstarch
  • 1 red bell pepper, sliced
  • 2 cups broccoli florets
  • 3 green onions, sliced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar (or lime juice)
  • 1 tbsp sesame oil
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook rice noodles according to package instructions until al dente; drain and set aside.
  2. Toss sliced beef with cornstarch in a mixing bowl until well coated.
  3. In a large skillet or wok over high heat, add vegetable oil. Sear the beef in batches for about 2-3 minutes per side until browned; remove from skillet.
  4. In the same skillet, stir-fry bell pepper and broccoli for about 4-5 minutes until tender-crisp. Add green onions, garlic, and ginger; cook for another 1-2 minutes.
  5. Whisk together soy sauce, hoisin sauce, honey/brown sugar, rice vinegar/lime juice, sesame oil, and red pepper flakes if desired.
  6. Return beef to the skillet with vegetables; add cooked noodles and pour the sauce over everything. Toss to combine.
  7. Serve garnished with extra green onions.
