  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the mini pumpkins, cut off their tops, and scoop out the seeds.
  3. Heat olive oil in a skillet; sauté onion and garlic until fragrant.
  4. In a bowl, combine ground beef, pumpkin puree, sautéed onion and garlic, spices and herbs; mix well.
  5. Grease a casserole dish; place pumpkins upright and fill each with the beef mixture.
  6. Roast in the oven for 30-35 minutes until tender.
