  • ½ cup celery (chopped)
  • ½ cup onion (chopped)
  • ½ cup carrots (chopped)
  • 1 tbsp fresh thyme
  • 1 tbsp fresh sage
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 cups bread flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp granulated sugar
  • ½ tsp salt
  • 1 ¼ cups buttermilk
  • 8 tbsp unsalted butter (melted then cooled – divided)
  • 1 tsp fresh rosemary (chopped)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a food processor, finely chop celery, onion, carrots, thyme, sage, salt, and pepper.
  3. Sauté the vegetable mixture in olive oil over medium heat for 10-12 minutes until softened; let cool.
  4. In a large bowl, mix bread flour, baking powder, baking soda, sugar, and salt.
  5. In a small bowl, whisk together buttermilk and 4 tbsp melted butter. Pour into the dry mixture and stir until combined. Gently fold in the cooled vegetables.
  6. Drop spoonfuls of dough onto a baking sheet; bake for 12 minutes.
  7. Brush with remaining melted butter mixed with rosemary and bake an additional 6-8 minutes until golden.
