  • 4 large egg yolks
  • 1/2 tsp xanthan gum
  • 1/3 cup cocoa powder
  • 3 tbsp butter, cut into 3 pieces
  • 1/2 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 3 tbsp powdered Swerve Sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/2 ounce sugar free dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, cocoa powder, powdered Swerve Sweetener, and salt. Stir in melted butter and water until well mixed. Press into a baking dish and bake for 15 minutes. Let cool.
  2. In another bowl, beat cream cheese with Swerve Sweetener until smooth. Fold in whipped heavy cream and spread over the cooled crust.
  3. For the pudding layer, heat almond milk with Swerve Sweetener until simmering. Whisk egg yolks in a separate bowl and gradually add hot milk mixture while whisking. Return to heat until thickened, then stir in xanthan gum, cocoa powder, and butter.
  4. Spread the pudding over the cheesecake layer.
  5. For topping, whip chilled heavy cream with Swerve Sweetener and vanilla extract until stiff peaks form; spread over the pudding layer.
  6. Garnish with cocoa powder and sugar-free dark chocolate before chilling in the refrigerator for at least two hours.
